“The proprietor of Bravium, Derek Rohlffs, makes this blanc de noirs entirely from barrel-aged pinot noir from the Wiley Vineyard in the Anderson Valley. Mr. Rohlffs takes a minimalist approach, adding nothing to the wine beyond a small amount of sulfur dioxide, a widely used stabilizer and antioxidant.
